The majority of the Guild Wars community believes that the Mesmer will be the 8th and final profession based off of deduction and reasoning from the facts already revealed. This is a compilation of the facts.

The Facts

1) It's returning profession from GW. - Eric Flannum
2) It's a scholar. - John Peters Article and Translation

Already Returning

• Elementalist - returning
• Ranger - returning
• Warrior - returning
• Necromancer - returning

What's Left

• Monk - The monk will not be a returning profession. - Jon Peters
  
• Assassin - No professions from Cantha in the initial release, home of the assassin. - Eric Flannum
• Ritualist - Ritualists will not be in the initial release of the game. - Colin Johanson @ 2:40
• Paragon - lore wise, it morphed into the Guardian and no longer exists. - Jeff Grubb
• Mesmer - Highly probable because:
  • People that enjoy playing mind games will enjoy this profession. - John Peters Article and Translation
    
  • People who enjoy Mesmer style of gameplay will feel at home. - Jeff Grub
    
  • The last profession will fill the expectation of Mesmer fans more than any of the other professions. Eric Flannum
    
• Dervish - The Dervish is still viable, but unlikely because:
  • As it currently is in GW1, it does not fit the known criteria of the 8th profession
  • Elona, home of the Dervish will not be in the initial release
  • Scythes are not usable weapons in GW2
