This is speculation, not fact. Feel free to discuss or poke holes in my logic.
Below is a set of logical deductions and arguments as to why mesmers are the last profession. THis is a development, some of the ones further down the page will refer to deductions made previously.

Section 1: Clear Deductions[edit]

1.A: The one returning profession is a profession that was originally in Guild Wars.
There are four professions that have already returned from the series (Warrior, Ranger, Elementalist, and Necromancer.)
The other six have had the following fates:
Paragon: Merged into Guardian
Assassin: Evolved into Thief
Dervish: Unknown
Mesmer: Unknown
Monk: Merged into Guardian and "no designated healing professions."
Ritualist: Too campaign/location specific to return in initial release. (Also, comparisons have been drawn between the ritualist and the engineer).
Upon closer examination of the two professions
Dervish: Medium armored, enchantment and desert based scythe wielder
Mesmer: Light armored, relatively unique spell caster based on illusions and control.
1.B : There are five races (asura, charr, human, norn, sylvari).
The dervish has very strong ties to the Six. (Humans)
Sylvari simply don't believe the Six exist.
Charr don't believe in the Six. (Not necessarily implying non-existence.)
Norn view them as embodiments of concepts.
Asura think they are parts in a larger "machine."
Of the five races, only one would be in alignment with the lore for the use of dervishes.
"All races can be all professions."

Dervish vs Mesmer[edit]

2.A: The profession is a scholar, and therefore wears light armor.
Using the information from A, we can either have a light armored/scholar dervish or a mesmer
I ask now that you picture a light armored dervish and then picture a mesmer. Make your own assumptions here.
2.B : "Players who enjoy the play-style of the ritualist or mesmer will feel at home in Guild Wars 2."
If you played a mesmer or ritualist in GW, what do you think would more accurately suit your play style?
A dervish, or a mesmer?
2.C : GDC Concept arts are profession wallpaper images.
Look at this.
Do you get the impression of a scythe-wielder from the desert...
Or a mesmer with illusions?
